Brad, the maestro-in-residence, moved to America when he was 18 and made his way in Michelin star restaurants of the smartest hotels in Las Vegas like The Bellagio and The Monte Carlo. You no longer see Brad presenting his new dishes to six assembled Executive Chefs there, but rather picking his own ingredients at VBG. With a culinary style described as classical European with a dash of American flair, Brad is working on a cookbook with dishes inspired by the Living Collection at VBG.
